Darren Dorcas is a chef and instructor in the Culinary Arts program. He is constantly exploring applied research opportunities to partner with industry as part of the program's Product Development course. When Darren participated in the Canadian Trade Commissioner’s mission to Boston’s food hub to explore food trends, sustainability, food and health, and food industry research and innovation, he found a strong focus on local foods, healthy foods and value-added foods. Produce baskets are becoming more popular and people are choosing to eat gluten-free, simply for the health benefits. He understands the food sector is interested in research relating to value-added food and he collaborates with industry partners who are interested in engaging NBCC Culinary Arts students in innovative recipe and product development.
